Tokaji is a region in Hungary known for its sweet wines made primarily from the Furmint grape. Dry Tokaji is a new thing, first introduced to the world in the year 2000, and has since become somewhat of a small sensation. We’ve been curious about it, so Dale’s been bugging our reps to bring us a dry Tokaji, and here it is! Wow, what a strange and delightful wine, you certainly taste the similarity to a sweet Tokaji, but dry, of course, with a crisp acidity. It has a sherry-like quality which makes it especially appealing as an apertif.
This would be great with indian food! How about grilled pineapple and steak kabobs, yum. Grilled mango… Tacos Al Pastor…
From the producer:
“Almost 90% Furmint complemented by Hárslevelu and cultivated through biodynamic viniculture. Rich aromas of acacia, pink grapefruit, and honey. The abundant acidity of the Furmint never tips the balance of the wine. Slightly smoky finish, likely thanks to the wood and the Hárslevelu, a variety often characterized by smoky impressions.”

This is a Dale favorite, and I love it too, (apparently many wine writers also love it) from the Languedoc region of France.
I’ve copied and pasted a bunch of great info below, so I’ll get right to the food pairings!
Great with cheese, Caramelized root veggies, almost any sort of game, Wild Boar, Elk, back to the chees, how about a fancy mac and cheese with a little prosciutto and sliced tomato thrown in? Mushrooms and spinach…

“A terrific value, the 2014 Languedoc Cuvee Prestige checks in as a blend of 55% Grenache and 45% Syrah that’s brought up all in tank. It has tons of Mediterranean character in its sweet dark fruits, lavender, damp earth and peppery herb-laced bouquet. This gives way to a full-bodied, sexy, layered 2014 that has plenty of fruit, fine tannin and a hedonistic style that’s just hard to resist. It’s another outstanding vintage for this cuvee that’s well worth a multi-bottle purchase. Drink it over the coming 4-5 years.”

Robert Parker, Andrew Jefford and David Schildknecht (among many
others) to discover their love affair with the Languedoc. And by that, we
mean head-over-heels, butterflies-in-the-stomach kind of love. We have had
affection for the region since the humble beginnings of European Cellars
when our motto was “unknown…and unsold” – an affection that remains
as exciting to us today as it did 25 years ago.
Château Puech-Haut has been on the critic’s radar for some time – which
makes sense since the property has employed Michel Rolland, Claude Gros
and now Philippe Cambie as consulting enologist. Visionary owner Gérard
Bru spares no expense in his quest for excellence. Located quite close to Pic
Saint-Loup, in Saint-Drézéry, Puech-Haut is near the far western border of
the Rhône valley and benefits from both its proximity to the Mediterranean
and the rugged, mountainous interior of France. There are slightly over 50
hectares planted with Grenache, Syrah, Mourvedre, Cinsault, Carignan,
Viognier, Marsanne, Roussanne, Grenache Blanc and Carignan Blanc.
The wines from Puech-Haut are rich and lush but also show the earthy and
mineral character of the rocky clay-limestone soils of the region.
Owner Gerard Bru, consultant Philippe Cambie and Eric Solomon have
collaborated on the Prestige Rouge since the 2009 vintage capitalizing
on the amazing limestone-rich terroir of Saint-Drézèry in the eastern
Languedoc. Combining 65-80 year old Grenache with 45 year old Syrah
then fermented and aged concrete, they have crafted a dense and powerful
wine capturing the warm climate of the Mediterranean with all its floral
aromatics of, dark fruit, spice, cracked pepper and garrigue.”

“Let’s just get right to the point, Chateau Puech Haut is one of the greatest and most talked about estates in Southern France at the moment. Jeb Dunnuck of The Wine Advocate has this to say about this over-achieving producer: “Easily one of the top estates in the Languedoc (if not southern France), Chateau Puech Haut lies just outside the village of Saint-Drezery and is owned and run by Gerard Bru, with consulting help from Philippe Cambie. They produce a number of cuvees, with their entry level efforts representing superb values, and their top cuvees being able to stand toe to toe with the greatest wines in the world.”

“In 2000, Gerard Bru checked out. He sold his business and moved back to Saint-Drézéry, a small village 15 km northeast of Montpellier. He grew up here, spending much of his time hunting and working with his grandfather in the local vineyards. Despite his knowledge of the land, he faced an uphill battle because there wasn’t a single vine on the property until he planted one, convinced that the terroir, covered in olive trees and wild herbs, would be conducive to spectacular wines.”

Ameztoi Getariako Txakolina Rubentis, Spain 2016
Txakolina, (pronounced Chacolina) or Txakoli is a style of wine from the Basque area of Spain, that’s made from grapes native to the region. 50% Hondarribi Beltza (red) and 50% Hondarribi Zuri (white) the white and red grapes are worked together, and go through a cold maceration for about 12 hours, (during which the wine gets its color from the red grape skins) then fermented in stainless steel for 20 days. The resulting wine is fresh and clean with bright red fruit flavors, a super crisp acidity, a bit of minerality and a touch of salinity. It’ll remind you of Vinho-Verde. Traditionally the wine is served in a large tumbler and poured from a height to enhance the slight effervescence. (although it’s great in a wine glass too!) In Basque, Txakoli is commonly served with “pintxos”, tapas-like appetizers served on a spike, a toothpick or skewer, usually a mix of seafood, sliced meats, cheese, breads, peppers, olives… This wine will pair well with almost anything, do an image search for “pintxos” and you’ll get the idea! (you’ll also be hungry!)

Feudo Maccari, Saia, Sicily 2013
Nero D’ Avola from Sicily. We had the 2012 as part of seminar last year, it was one of our favorite wines that night, we decided to revisit Saia for WINE CLUB. The current vintage is 2013 and it’s yummy. Blackberry on the nose dark cherry on the pallet, big without being bulky or dense, clean, pretty, and complex, while still a big full flavored wine. The tannins are substantive, but not blocky. Drinks great now, should be amazing in a couple of years, and should hold up well for 8 or 10 if you want to sit on a bottle. Pair with grilled steak, venison, wild boar, stews, roasts, blue cheese, charcuterie

Au Bon Climat Santa Barbara Chardonnay 2014
Au Bon Climat began making wine in 1982, focusing on Burgundian varietals made in a classic style. This is a beautiful Chardonnay, elegant bright citrus, slight minerality, with only a hint of oak. We had the previous vintage of this wine in a seminar a little over a year ago and liked it very much then. I recently took a bottle of the 2014 home and Amy and I were blown away by how lovely this wine was!
Will go great with shellfish in a light buttery sauce, a little garlic, zucchini and tomato, Baked Chicken with parmesan, sauteed white mushrooms, and asparagus.
Tikal Patriota 2013
60% Malbec, 40% Bonarda,
We tasted this just about a week ago with several really nice wines from South America, there wasn’t a bad wine in the bunch, but this really stood out as a special wine, and an interesting blend! Big Dark and Brambly, dark cherry nose, blackberry and licorice on the palette, a nice touch of spiciness, and a long finish that stays and stays, Finishes with a soft acidity that balances the generous fruit and some fairly hefty tannins. This wine should age well for several years as the tannins soften and the fruit mellows, but it’s wonderful now!! Drink this with grilled or smoked meats, grilled lamb in particular will go great with this. The spiciness and bold fruit will make this a great pizza wine as well!

Minges Gleisweiler Scheurebe Trocken 2015

I tasted this wine early fall as part of a Terry Theise collection pre-order. Sheurebe is the grape, and this is a beautiful example. “Troken” means Dry in german wine nomenclature. This wine is crisp bright and has a nice minerality, you catch a little fresh gravel/damp driveway on the nose with flavors of a hint of mandarin orange finishing with grapefruit. A great apertif, or with fruit salad, light seafood dishes, thai food. Keep the food on the light and bright side, a bit of spiciness will work well, this wine manages to be both delicate and bold at the same time with great complexity, depth and a long satisfying finish, Yum.
Emblem Napa Valley Cabernet Sauvignon 2013

Blend: 79% Cabernet Sauvignon, 8% Petite Sirah, 5% Petit Verdot, 4.5% Syrah, 2% Zinfandel, 1.5% Merlot

It’s time for a big bold Napa cab in the modern California style! Will age well for 10ish years, but this monster is designed for drinking now. Michael Mondavi is the winemaker, son of the Iconic Napa wine innovator Robert Mondavi. Michael runs the Mondavi Family Estate, while his brother Tim has Continuum Winery.
Grilled filet mignon, marinated in olive oil, vermouth, with some honey (or brown sugar), a little Bragg’s (or soy sauce), some paprika, fresh rosemary and sage if you have it, and fresh minced garlic, a big portabello would work too! Beef ribs in a sticky spicy marinade, or save it for after dinner!

Here’s what the Winerey has to say:
“The Oso Vineyard provides the central character and structure of the wine, while the balance of the grapes from the valley floor contribute roundness and complexity.
Vinitfication: After the grapes were gently hand-harvested, de-stemmed and crushed, the juice fermented in temperature-controlled stainless steel tanks, with an extended post-fermentation maceration that beautifully married flavors and tannins, giving our Emblem Napa Valley Cabernet Sauvignon its lovely, seamless texture. Malolactic fermentation in barrel, combined with 18 months aging in French oak (66% new), further concentrated the wine’s rich cassis and blackberry cobbler flavors, adding subtle nuances of torched crème bruleè.”

The Wine Advocate – “The 2013 Emblem Cabernet Sauvignon is a blend of 79% Cabernet Sauvignon, and the rest Merlot, Petit Verdot, Syrah, Zinfandel and Petite Sirah. It sells at a very modest $35.00. The wine has a deep ruby/purple color, loads of juicy fruit, a medium to full body (about 14.7% natural alcohol), a lush, heady, accessible mouthfeel. This is a steal, and a sleeper of the vintage, and capable of lasting up to a decade or more.”

Zinck Pinot Blanc, Alsace France 2014
“A vibrant, zesty Alsatian Pinot Blanc with an assertive acidic attack on the palate. Aromas of white grapefruit and lime. Pair with shellfish.
Notions of baked Mirabelle plums lend their full-fruited aspect to nose and palate. Their softness is countered by fresh, lively crispness. This is friendly, refreshing and fruit-driven. The vines for this Alsatian white wine are planted in the silt soils of Eguisheim developed by Philippe Zinck. Very dry and mouth-watering.”

The most important reason we choose this as one of the December wines is… Fondue!!
In the Benjamin family cold weather means it is time for melted cheese. Alsatian Pinot Gris is a perfect match! Dick and Sally Benjamin spent several years living in Switzerland and returned with their “Echter Schweitzer Fondue” (Real Swiss Fondue) recipe.
I’ve added the recipe below, with a few comments from me.
Another fun thing about Pinot Blanc from Alsace, is that it can age very well! We had one from 1990 with a fondue last week and it was amazing.
other Pinot Blanc food pairings: salmon rice bowl, Thai shrimp, chicken caesar.

Northstar Merlot, Columbia Valley, Washington 2011
Merlot is making a comeback, led by wonderful wines from Washington state. Northstar was founded in the early 1990s and focuses on Merlot. Dale and I loved this when we tasted it, and know that you will too!
“The 2011 vintage has rich concentrated aromas of cherry, raspberry and chocolate that lead into flavors of cinnamon and vanilla. It is subtle and soft with a lingering toasted oak finish. This wine was created to enjoy now, or for many years to come as it will age gracefully. Diversity of vineyards and sub-appellations within the Columbia Valley are Northstar’s hallmarks. Fruit is selected from the very best possible sources throughout the Columbia Valley. Winemaker David “Merf” Merfeld works closely with each grower to achieve specific fruit quality and yield parameters. Vines average 15 years old and yield grapes with concentrated varietal flavors of cherry and plum with elegant tannins. Fruit from more than 10 separate vineyards and 14 different blocks contributed to the blend.”

Echter Schweizer Fondue (Real Swiss Fondue)

{You’ll need a Fondue Pot! Paderno World Cuisine Fondue Set or Swissmar Fondue Set}

Quantities are per person as a main course

Ingredients
~1/3 pound of coarsely grated Swiss-style cheese per person
We like about half Gruyere(or more) and half other Swiss (e.g., Emmental, Appenzel) or Swiss-style cheeses. {We have been using Fontina as the secondary cheese, and a little Havarti as a third cheese} But there are many possible variations (including all Gruyere). You may try the Swiss-styled cheeses from other countries such as Jarlsberg from Denmark or Comte or Fol Epi from France. We like to add a bit of softer creamier mild cheese such as Havarti for a smoother mixture.
~ 5 ounces of dry white wine per person
Select a dry, fairly acidic, relatively neutral (not very fruity) white wine with no oak. {We used a Picpoul de Pinet recently and the Fondue was amazing, another good, and very inexpensive one is La Ville Ferme Blanc} (Swiss wines such as Fendant, Aigle, or Dezaley are ideal, but hard to find and much too expensive.) We like Grüner Veltliner (from Austria), white blends or Pinot Blanc from Alsace, crisp Sauvignon Blancs, crisp Pinot Grigios from Italy. A good shellfish white is usually a good fondue wine. Many California wines are too fruity and not acidic enough for good fondue.
~1½ teaspoon of cornstarch (1-4 people).
~1 ½ jigger of Kirschwasser (1-4 people) cherry brandy – the distilled firewater, not a sweet liqueur.
{most importantly,  you are looking for firewater, not a flavored liqueur, European fruit brandy works perfectly, we’ve used moonshine to add a little local flavor, even something like Paul Masson white brandy will work in a pinch}
1 large clove of fresh garlic
½ fresh lemon (seeded)
A ceramic Fondue pot, and a stand with an alcohol burner
A slotted wooden stirring spoon {needs to be wooden, but slotted is not necessary}
A loaf of French or Italian bread with a hard crust, not too fresh, cut into ~1 inch cubes. Each cube must have some crust to hold the Fondue fork. {day old is best}

Rub the inside of the Fondue pot with cut garlic and put about ½ of the garlic clove, very finely diced, in the bottom of the pot. Add about three-fourths of the wine and put the pot on a gas or electric range at medium-high heat. When the wine just begins to bubble, begin putting the cheese in, stirring with the slotted wooden spoon. As the cheese melts, add more cheese until all of the cheese is in solution. Continue stirring. Add the juice of ½ lemon, and then the cornstarch mixed well with 1½ jiggers of Kirschwasser. Continue stirring. If the mixture is too thick, add some of the retained wine. If, after a few minutes, the mixture is too thin, add a bit more cornstarch well-mixed with Kirschwasser. If it separates, add more lemon juice.

Put the burner in the middle of the table and put the bubbling pot on the burner. Use immediately (or have someone continue stirring). If you wish something more than bread, serve small Gerkins, small cocktail onions, or thin-sliced salami. Fun!
{we like prosciutto! Also, pour some of the Firewater you used with the cornstarch in a shot glass for each diner, dip your bread in quickly before stirring it in the pot, and… when you eat it… WOW!  aaand… If you are careful to stir in a circle around the edges of the pot, a crust will form in the middle, at the end of the meal you can scrape the crust from the bottom of the pot carefully with a fondue fork and split it for a special burnt cheese treat}

Pieropan Soave 2015
Pieropan is a family owned winery founded in 1880 by Leonildo who was a physician in the town of Soave. Garganega and Trebbiano di Soave are the traditional grapes of Soave although legally small amounts of Chardonnay and Pinot Blanc can be added. Pieropan uses only the traditional grapes and sources from their own vineyards. We used the 2014 vintage during the Veneto, Italy seminar in July, there are a few bottles left in the shop. I tasted them together last night, the 2015 is a little more fruit forward than the 14, with a similar salinity, minerality and depth. Dale has been seeking out a good Soave for quite a while, we’ve tasted several over the last year or so, and this is the one we both loved! Production of this wine is all certified organic.

Tasting notes from the producer – “Straw yellow with brilliant, greenish and golden reflections, the bouquet is fresh, ample & floral with notes of elderberry, apple, pear and lemon verbena on a background of almonds and nuts; fresh, elegant & well balanced on the palate, with a long finish.”
Blend: 85% Garganega and 15% Trebbiano di Soave
This wine serves as a great appertif, is wonderful withh all kinds of seafood, salads, steamed and lightly seasoned veggies!
Bodegas Muga Reserva 2012
My wife Amy and I were in Asheville and picked up a bottle of this, (2011) and drank it late one night after having beer at a party, wow, it was just what we wanted. I ordered some for the store when we got back, we got the 2012. We tasted the ’12 last week and it was amazing. Very well balanced, beautiful fruit, wil substantial but smooth tannins. This wine gets better with every sip, you will be very sad when the bottle is empty!

The Wine Advocate – “The red 2012 Reserva is sold as Crianza or Reserva depending on the market, but it’s always a blend of Tempranillo with some 20% Garnacha, 10% Graciano and 5% Mazuelo from the lower part of the valley of the Oja-Tirón river. The varieties are fermented and aged separately until most of it (around 80%) is blended the summer after… 2012 saw good ripeness, and the wine shows it, but doesn’t show any excess. The vinification is as classic as it gets: the grapes ferment with natural yeasts with a ‘pied de cuve’ and the wine matured in new barriques the first year; it was then transferred to well-seasoned barrels for a further year of upbringing. It still feels quite oaky with some smoky aromas and some notes of roasted sesame seeds. The palate is lush and round, with polished tannins. This is a textbook Rioja at a very good price for the quality it delivers. This wine should be readily available, as it’s produced in good quantities, close to one million bottles, which for this quality is impressive. Rating: 91(+) Points.”

Here’s the producer’s tasting notes – “On the nose, it displays ripe, dark fruit, grape syrup, bitter chocolate and as it opens up, hints of spices such as pepper, vanilla and a little mountain scrub begin coming through. On the palate, it is balanced with a soft touch of acidity to give it good potential for cellaring. The attack is broad and long, with an evolution in the mouth which spreads silky and mineral sensations before concluding with sweet tannins which still have a lot of grip and will benefit from some time out for their full integration.”

This will pair well with almopst any kind of lamb dish, paella, chorizo, grilled eggplant with a little paprika, shepherd’s pie…

Talbott Kali Hart Pinot Noir 2013
This pinot is made from 100% estate fruit at Talbott Vineyards, founded in 1982, this is a delightful entry-level Pinot. This really has that funkiness I associate with good Pinot, while still being bright and fresh. Here’s what the producer has to say about the wine: “Talbott Kali Hart Pinot Noir is a pure fruit expression of Talbott’s vineyard. It is made to be bright and appealing upon release, with the fresh, cool climate flavors for which the Monterey County AVA is known. It has a beautiful, deep ruby color with bright fruit aromas of cranberry, currant and plum, as well as hints of vanilla. The crisp red fruit flavors continue on the palate, where they are accentuated by soft, smooth tannins. The finish is long with lush fruit and hints of vanilla and French oak. Kali Hart Pinot Noir is named after Robb Talbott’s youngest daughter.”
This is going to be really nice with Grilled or roasted meats, lamb! Grilled Portobellos, Moussaka, Veal Meatloaf, grilled Salmon on roasted tomato and mushrooms with crumbled feta, and a drizzle of fig vincotto vinegar…
The Supernatural New Zealand Sauvignon Blanc 2014
I was immediately attracted to this wine, being a lover of Sauvignon Blanc from anywhere in the world. This wine is particularly interesting (and super yummy!) We all know New Zealand Sauv. Blanc, The Grass, the Grapefruit, The High Acidity? This isn’t that! It’s from Hawkes Bay rather than Marlboro, (where the grass and grapefruit wines come from) and displays more of a european character, while still being a big fruity new world wine. It has some of the viscosity, or oiliness, that I usually associate with viognier, it’s more tropical than citrus, and displays some nice subtle minerality. The Wine Spectator says this: “Smooth and rich, with toasted spice and honeysuckle accents, featuring flavors of crisp lemon, ripe melon and baked pear. Seamless acidity weaves in and out, giving all the nuances freshness and vitality. Drink now. 4,000 cases made.”
aaaaand… the Crown Cap, for a wine meant to be consumed young the crown cap is an excellent enclosure, provides a great seal, is easy to remove, and can even handle the pressure of a sparkling wine.
This is going to be a very adaptable food wine because of its round complexity and sufficient acidity. How about Fish Tacos, Grilled marinated shrimp, Chicken and asparagus sauteed and served on fresh pasta with parmesan…

Praxis Gewurtztraminer 2013
Russian River Valley, Sonoma, CA
This is a dry Gewurztraminer, with full Gewurztraminer character, similar in style to the structured and complex Alsatian Gewurtz’s. Many Gewurtraminers you encounter will be at least a little sweet, we love this grape as a dry wine!! The grape tastes and smells a little like a Lychee Nut. If you’ve never tried a Lychee, you can sometimes find them canned at Asian markets, and definitely worth trying if for no other reason than to compare with a gewurtz! We always recommend Gewurztraminer as the ideal match for Thanksgiving Turkey, but it’s also one of the best wines for Asian and Indian food. Be sure to let the bottle warm up a bit before you drink this, the flavors are muted at refrigerator temperature, but really jump out of the glass as the wine approaches room temperature.
A good inexpensive sweet gewurtz we have in the shop, is the Robertson from South Africa, it’s also yummy!
Wine Enthusiast gave the Praxis a respectable 89, I would rate it higher!!

The Pundit Syrah 2014
88% Syrah, 6% Grenache, 4% Mourvèdre, 2% Viognier
This is a collaboration between renowned Rhone winemaker Michel Gassier, and Washington State Winery Chateau Ste. Michelle. The grapes are sourced in Washington State. Approximately 22% of the grapes were fermented as whole clusters, remember the Whole Cluster Pinot Noir from Willamette Valley? (April 2016 selection) We tasted the 2013, thought it was great, wanted to use it for Wine Club in January, but couldn’t get any. It had sold out completely! (found out later that it got ratings in the 90s from many of the major critics) Robert Parker’s Wine Advocate gave this wine, the 2014, 92pts, and had this to say:
The Wine Advocate – “The finest vintage of this cuvee to date (it’s only the second year for the cuvee though), the 2014 Syrah The Pundit has loads of ripe dark fruits, charcoal, smoked herbs and licorice in a concentrated, rich, yet always balanced and fresh style. Made from 88% Syrah, 6% Grenache and the rest Mourvedre, aged mostly in French oak (which is a positive change from the American oak used for the 2013), with a small part in concrete, drink this pleasure-bent effort over the coming 4-5 years. ”
Pairing? Syrah is know for it’s flexibility, this would be considered a warm climate heavy syrah, so you’re going to want a meal with some heft, and some interesting spice, a little mint, for example is going to bring out extra flavors in this wine

Galerie, Naissance, Napa Valley, Sauvignon Blanc, 2014
A wonderful California style Sauvignon Blanc made by Laura Diaz Munoz. Originally from Spain, she’s worked there, New Zealand, and Chile, but has settled in Napa and makes the Galerie line of wines for the Jackson Family. Her first wine memory is of enjoying a Spanish Albarino. This Sauvugnon Blanc displays some of the minerality I associate with a good Albarino or Califonia Sauvignon Blanc. This wine is beautifully balanced, you’ll really appreciate this wine’s elegance as it grows in the glass. Broiled Sea Bass with olive oil and Goat’s Cheese, Grilled Shrimp tacos with guacamole, light Asian fare, sushi or Thai salads.

Böen, Pinot Noir,Russian River Valley, Sonoma, CA, 2015
This is Joseph Wagner’s project, part of his Copper Cane company, you may know him as the winemaker of the Belle Glos single vineyard Pinot Noir wines that he still makes, and for the Meomi Pinot Noir which he developed but has since sold to Constellation Brands. The Wagner family has farmed the Caymus vineyard since the 1940s and established the Caymus winery in 1972. (the same year Wine World opened in North Augusta!) The Wagners also make the Emmolo, Mer Soleil, and Conundrum wines. Elouan is made by Joseph as well. This Russian River Pinot is definitely in the Wagner style, big, bold, and fruity. As fruit forward as this wine is, it also shows lots of richness, complexity, and nice balance across the palate. The Tech. sheet says “Cola, vanilla cream soda. Chocolate and black licorice carries through to the palate. Dried strawberry flavors with hints of cranberry and prune. Fresh, bright acidity. A dustiness or earthiness and very fine and persistent tannins.” Seems just about right to me! Cuban style sandwich with ham, gruyere, and chopped olives, Jerked Chicken, pasta salad with bacon and Italian sausage, veggie lasagna w/ portabello.
